We are seriously loving watching all of the olympic games over here the past week and a half. I just love the competition, sportsmanship and pure spectacle of it all! I have always loved watching Olympic gymnastics, especially when I was a little girl. I really enjoy feeling like I get to know each of the athletes throughout the games.

Favorite New Dinner
I'm obsessed with this simple dinner lately. There is nothing better than something healthy and fast!
{disregard the un-classy dinnerware: all my bowls are in the dishwasher and this is leftovers!}
Beans and Rice
1. Prepare 2 servings (about 1 cup) of brown rice. I love the instant brown rice for its convenience!
2. While the rice is cooking, rinse and drain 1 can of beans. I happen to prefer black beans.
3. Open and drain one can of diced tomatoes and green chilies (mild or hot depending on your preference.)
4. Once your rice is cooked, mix in your beans and tomatoes/chilies.
5. Add 1 tsp garlic powder, and 1/2 tsp. each of cayenne and cumin. Finish off with about a tablespoon or more of lime juice.
6. Serve as is, or add in ground beef prepared with taco seasonings and/or a dollop of sour cream. I also think this dish could only be improved with fresh cilantro.
Enjoy this as a side dish to your favorite Mexican food or as a meal itself! Obviously, I find Beans and Rice to make great leftovers. Enjoy!

When Rachel asked if I was up for a kitchen experiment, I believe she knew that I'd be up for anything. This cookie-candy-bar dessert is something special, best consumed hot out of the oven with a cold glass of milk.
